Roasted Acorn Squash

Acorn Squash was a side in our Winner, Winner Turkey Dinner and I thought it deserved it’s own blog post.

You can hardly call this a recipe, because it is so very, very simple to make.

Nothing says Fall, quite like acorn squash.

The squash was a perfect side for our turkey dinner, as well as, roasted smashed potatoes.

What you will need:

Baking Dish

Acorn Squash

Butter

Brown Sugar

Water

What to do:

Preheat oven to 425 degrees.

Scrub up each Acorn Squash with a vegetable brush.

Slice in half using a very sharp knife.

Scoop out the seeds and discard.

Score the top of each squash with a paring knife.

Next, place a pad of butter in each half as well as a small scoop of brown sugar.

Place each half cut side up in a baking dish.

(I quartered one of my halves so I could fit all of the squash in one dish)

Fill about 1/4 of the baking dish with water.

Let squash roast for about 1 hour in the 425* oven.
