Pumpkin Pancakes – This recipe yields approximately 6 thick, medium sized pancakes.
What you will need:
4 Cups of Pancake Mix (My favorite is Meijer Complete Buttermilk Pancake Mix)
1 Cup of Canned Pumpkin
2 Tablespoons of Light Brown Sugar
1 Tablespoon of Cinnamon
Approximately 2 ½ cups of cold water
(You can use a little more, or a little less. I like thick, fluffy pancakes, so I always use a little less water so my batter is on the thick side. )
Cooking Spray
What to do:
Spray a skillet with cooking spray and heat over medium heat.
Place the first 5 ingredients in a mixing bowl and combine until they are incorporated.
Scoop one ladle of batter and pour onto heated skillet.
Cook each side for approximately 1-2 minutes (depending on the thickness) or until both sides and all of the ends are thoroughly cooked.
Be sure to spray your skillet before each scoop of batter is placed in the skillet to cook.
Serve plain (they are that good!) or with a side of maple syrup. These pumpkin pancakes would also look and taste amazing topped off with a little whipped cream that has been sprinkled with cinnamon.
