Baked Spaghetti Squash

What you will need:

2 Large Spaghetti Squash

2 Tablespoons of Butter

Parmesan Cheese

Shredded Mozzarella Cheese

Oregano

Garlic Salt

Pepper

What to do:

Preheat oven to 350 degrees.

Line a baking sheet with aluminum foil.

Give each spaghetti squash a good scrub and cut into half.

Discard the seeds.

Place each half onto baking sheet (I used one baking sheet for 4 halves).

Bake for about 1 hour 15 minutes in a 350 degree oven.

Carefully remove the spaghetti squash from each shell and place it into a mixing bowl.

Set the shells back onto the baking sheet.

Add the butter, parmesan, oregano, garlic salt and pepper to the squash.

Please note: I never measure seasoning. I season to taste.

So give a little shake here, a little shake there and make sure it tastes good to you. You can always add more if needed.

Give all of the ingredients a good mix.

Place a ¼ of the mixture back into each shell.

Sprinkle the top with shredded mozzarella.

Place back in the oven for about 10-15 minutes or until cheese is bubbly.

Be prepared for some yummy goodness!

This side dish has such an elegant appearance, yet it is so simple to make! Let me know what you think!

Spaghetti squash is so versatile. I cannot wait to make it again, but next time I am going to make it with my favorite flavors: Garlic, Tomatoes, Spinach and Artichokes. It will pair perfectly with a nice glass of Riesling. Stay tuned for that recipe. 🙂
