You will need:
*2 Cups of Quinoa
*2 Cans of Black Beans, drained and rinsed
*1 Red Pepper
*1 Orange Pepper
*1 Yellow Pepper
*1 Sweet Onion
*A Handful of Grape Sized Tomatoes, halved (I used a Gourmet Medley)
*Shredded cheese, optional
(I sprinkled the top with a shredded mexican cheese blend)
*Avocado
*EVOO
*Cooking Spray
*Salt and Pepper
What to do:
*Cook 2 Cups of Quinoa per package directions
*Dice the onion and peppers and saute over medium heat in a skillet coated in EVOO for about 7-10 minutes.
*Drain and rinse 2 cans of black beans
*In a large mixing bowl, add the cooked quinoa, sautéed peppers and onion, drained and rinsed black beans and halved tomatoes. *Season with S & P.
*Give a good mix until all ingredients are combined. Transfer to a baking dish (sprayed with cooking spray) and bake in a 350 degree oven for about 20 minutes or until warmed through and cheese is melted.
*Serve with slices of avocado.
