What’s in the Chicken Salad?
2 Chicken Breasts, diced.
1 Gala Apple, diced.
3 Stalks of Celery, diced.
A Handful Of Seedless, Red Grapes, Quartered.
½ cup of low-fat vanilla yogurt and ½ cup of low-fat mayonnaise, whisked together.
Combine all ingredients and season with S & P.
Place a spoonful of the chicken salad on your favorite roll/bun.
(I used mini ciabatta rolls and served with carrots and red pepper hummus)
