I made these veggie tacos the other night and my family and I couldn’t get enough of them. We all dove in for seconds and my kids requested leftovers the next day first thing in the morning! I feel like throwing a party just so I can serve these and share the yumminess with others. These tacos are light, packed full of nutrients, full of flavor and would be great served with a Dos Equis or Fresh Brewed Iced Tea; perfect for a refreshing, summer meal!
Ingredients
3 Medium Zucchini – Diced
6 Green Onions – Remove most of the white part and finely chop
1 Can of Cannellini Beans, drained and rinsed. (you could also use northern beans or black beans)
1 Small Package of Frozen Corn (I steamed my corn first, and then added it, but you could add it frozen too and wait for it to cook through)
4 Cups of Fresh Spinach
Taco Shells (about 20 shells so you have enough for leftovers) Cook it once, eat it twice! 🙂
Salsa Verde
Shredded Mexican Cheese
Limes
Extra Virgin Olive Oil
Salt & Pepper
Cumin
Chili Powder
Oregano
Let’s get started:
Heat a pan coated in EVOO over medium heat.
Add zucchini and green onion.
Cook for about 5-7 minutes.
Season with S & P and a couple shakes of cumin, chili powder and dried oregano.
Give a good mix and cook for about 2 more minutes.
Add beans, corn and spinach. Cook for about 5 minutes or until spinach is wilted.
(Cook longer if you added the corn while it was frozen)
Spoon mixture into a taco shell. I like to use Old El Paso Stand ‘N Stuff Taco Shells. They stand up on a plate allowing a pretty presentation and they are super easy to fill.
Sprinkle with shredded Mexican Cheese. (you can find it in the specialty cheese case)
Wash and quarter a small lime. Use one wedge per taco and squeeze fresh lime juice over taco. (Don’t skip this part! I think this is one of the reasons the taco is so amazing and refreshing!) Lime tip: limes were .89 each, but the better buy is a small bag for $2.99. You can use the leftovers for a pretty centerpiece, beer or more recipes. 🙂
I like to serve Salsa Verde on the side. My husband and I love the addition, but it may be a little too spicy for kids.
