Ingredients
18 Chicken Tenders Seasoned With Salt
Cooking Spray and/or EVOO
Please note: I did not measure any of the ingredients below:
Flour
3 eggs (beaten) you can add: Dijon or Honey Mustard for extra flavor and a little garlic powder or paprika.
I used Dijon and Paprika
Panko Bread Crumbs combined with Parmesan Cheese and Seasoned with S & P
Let’s get cooking!
Preheat oven to 450 degrees
Cover a baking sheet with aluminum foil for easy clean-up.
Place a cooling rack on the baking sheet and spray with cooking spray.
Working with one chicken tender at a time:
*Dredge in flour
*Dip in egg mixture
*Roll in bread crumbs, making sure chicken tender is evenly coated.
Once all of the chicken tenders are prepared and placed on baking sheet/cooling rack, spray them lightly with cooking spray or drizzle with EVOO to prevent the panko from burning.
*Bake in a 450* oven for about 20 minutes.
Garnish with Parsley (optional ) and serve with any dipping sauces you prefer.
Potato Wedges
Cut Yukon Gold Potatoes into Wedges.
Place them on a baking sheet lined with aluminum foil.
Drizzle with EVOO.
Season with S&P, and any other seasoning you prefer. (I used grill seasoning and garlic salt)
Sprinkle with Parmesan Cheese.
Toss wedges with your hands to make sure they are evenly coated .
Spread them out evenly, so each one can get crispy.
Bake in a 450 degree oven for about 20-30 minutes or until wedges are brown and crispy.
