A snowy and cold day = the perfect day for a big pot of Chunky Cheesy Potato Soup, one of my all-time favorites!
You will need:
- 4 Tablespoons of Margarine
- 4 Tablespoons of Flour
- Salt
- Pepper
- Thyme
- 16 oz of Milk
- 8 oz of cheese ( I like to use Sharp Cheddar)
- 32 oz of Vegetable Broth
- 12 Medium Yellow Flesh Potatoes, washed/cubed, with skin on

Melt margarine in a stock pot.
Stir in flour.
Add milk.
Cook and stir continuously until thick and bubbly.
Add Cheese.
Stir until incorporated.
Add Vegetable Broth.
Season with Salt, Pepper and Thyme.
Add cubed potatoes.
Bring to a boil, stirring frequently.
Once soup comes to a boil, reduce to simmer and cover the pot.
Cook for about an hour or until potatoes are fork tender.
I garnished the soup with shredded cheese and parsley and served it with Cornbread.
