My 4-year old daughter saw an assortment of baby potatoes at the grocery store. She just had to have them….”they were so cute”. No complaints from me; I LOVE potatoes! She could not wait to get home and bake them, apron on and all!
Here is an easy recipe:
- Boil the baby potatoes until they are fork tender
- Drain the potatoes and line them up on a baking sheet covered in aluminum foil … (makes clean-up easy!)
- Smash the potatoes (my daughter did this and had so much fun!)
- Drizzle potatoes with EVOO
- Sprinkle with S & P, garlic powder and your choice of seasoning.
- (We used an Italian Medley and Fresh Rosemary)
- Bake in a 400 degree oven for about 20 minutes or until golden brown and crisp
- Sprinkle with a little parmesan
- Enjoy
