Crisp Oven Roasted Potatoes

My 4-year old daughter saw an assortment of baby potatoes at the grocery store. She just had to have them….”they were so cute”. No complaints from me; I LOVE potatoes! She could not wait to get home and bake them, apron on and all!
Here is an easy recipe:
  • Boil the baby potatoes until they are fork tender
  • Drain the potatoes and line them up on a baking sheet covered in aluminum foil … (makes clean-up easy!)
  • Smash the potatoes (my daughter did this and had so much fun!)
  • Drizzle potatoes with EVOO
  • Sprinkle with S & P, garlic powder and your choice of seasoning.
  • (We used an Italian Medley and Fresh Rosemary)
  • Bake in a 400 degree oven for about 20 minutes or until golden brown and crisp
  • Sprinkle with a little parmesan
  • Enjoy
