I found a recipe for Turkey Meatballs on FoodNetwork.com a few years ago and it has been a regular in my family ever since. It is a recipe from Ellie Krieger. I only changed two things: I substituted fresh white bread crumbs with Italian Seasoned Bread Crumbs that I always have in my pantry. I used Minced Garlic that I found in the produce section instead of Fresh Garlic Cloves. The meatballs are so simple to make, but I will warn you: They will smell AMAZING broiling! 🙂
Lets get started with what you will need. We are a family that LOVES leftovers, so this recipe is for a double batch:
- 3lbs of Lean Ground Turkey Seasoned with Salt and Pepper
- 1 Cup of Finely Grated Carrot
- 1 Cup of Finely Chopped Onion
- 4 Large Garlic Cloves, Minced
- 1 Cup of Italian Seasoned Bread Crumbs
- 4 Tablespoons of Minced Fresh Parsley
- 4 Teaspoons of Minced Fresh Thyme
- 2 Eggs Lightly Beaten
- Cooking Spray
- Preheat the Broiler
- Line Baking Sheet with Aluminum Foil and Spray with Pam

Combine all ingredients and form into 2 1/2 balls. Place the meatballs on the baking sheet and broil until all sides are brown and crispy, turning once.

Serve with Whole Wheat Spaghetti and Marinara Sauce. Garnish with Parsley
