Pasta e Fagiole – A Quick and Easy Soup

I love making soups! They are simple, flavorful and packed with nutrients. And the added bonus? I must get several soup requests from my 2 year old boy weekly! He LOVES soup! Any. Kind. Of. Soup. Last weekend, we took a little getaway to celebrate my dad’s bd. We were out to lunch on the last day, and of course, my boy wanted soup. The waitress asked if he would like a cup or a bowl. He responded “I want a whole bunch”. {Insert my laugh and adoring eyes} And let me tell you, he CAN eat a whole bunch. 🙂

Pasta e Fagiole is one of our favorite soups! It is delicious and it only takes about 5 minutes to prepare and about 25-30 minutes to cook. Can we say “Amazing”?! I love quick and easy meals these days!

Here is what you will need:

  • Extra Virgin Olive Oil
  • Salt & Pepper
  • 32 oz of Vegetable Broth ( you could use chicken broth if you prefer)
  • 2 cans of Cannellini Beans
  • 1 can of Diced Tomatoes w/Sweet Onions
  • 1 red onion
  • 2 cloves of minced garlic
  • 6 oz of Fresh Baby Spinach
  • 1 cup of Ditalini Pasta
  • Parmesan Cheese (for added flavor)

Ingredients

  • Coat your pot with EVOO and warm the oil over medium heat. Mince two cloves of garlic and dice one red onion. Add the garlic and onion to the pot of oil. Season with salt & pepper.  Stir occasionally for about 5 minutes or until the onion is soft.

  • Add the broth and the can of diced tomatoes (with juices) to the pot.

  • Add the beans (drained and rinsed) and 1 cup of pasta to the pot.
  • Cook, stirring occasionally  for about 15-20 minutes or until pasta is cooked.

  • Add 6 oz of fresh spinach and season with salt & pepper. (Don’t be alarmed. 🙂 It will look like a lot of spinach at first, but will wilt within seconds of being stirred.)

  • Cook, stirring occassionally for an additional 3 minutes until spinach is wilted and completely incorporated.

Cook an additional 2-3 minutes

  • Ladle the soup into a bowl and sprinkle with parmesan cheese for added flavor.
  • I like to serve the Pasta e Fagiole with garlic toast.

And there you go! One of my all-time FAVORITE soups. It’s quick, easy, full of flavor and packed with nutrients! What’s not to love?! There were a lot of mmmmmm’s to be heard! 🙂
