Easy Slow Cooker Pot Roast

I love slow cooker meals because they are simple! I use my slow cooker at least once a week and I always use my slow cooker(s) for large family gatherings. I have time to visit with my company while the meal is cooking and I don’t have to worry about transferring anything to serving platters. I always have everything set up buffet style.  Our guests can load up their plates whenever they are ready to eat and go back for seconds at any time.

Slow cooker meals are easy to prepare, full of flavor and do not leave a sink full of dirty pots and pans.  I made pot roast last week per my daughter’s request. It has always been a family favorite and one of my children’s all-time favorite meals. This meal will take about 5 minutes to prepare and about 8 hours to slow cook on low heat. Let’s get started with what I used and how I prepared the meal.

  • Slow Cooker Liners (If you are not interested in liners, just skip this step 🙂 )

They are not necessary, but I highly recommend them. I use Reynolds Slow Cooker Liners. They cost about $2.00 for 4 bags (look for coupons, you can save between .50-$1.00) and I think they are worth every penny. I especially love them for when I take passing dishes to parties. Once my slow cooker is empty, I pull out the disposable liner, throw it in the trash and take my slower cooker home. I do not have to scrub it clean and more importantly, the host doesn’t feel responsible for cleaning it.

I must say, this pot roast meal is full of liquid, so nothing typically gets baked on. I still use a liner for all of the juices. We do not have a garbage disposal, so I carefully pull out the liner (with all of the liquid inside) and place the liner into a grocery bag that I have placed inside the trash bag of our waste container. I knot the grocery bag and voila, my slow cooker is clean and I am not searching the house for a can to put the juices in!

Slow Cooker Liners

  • Boneless Beef Roast.

  • 2 – 14.5 ounce cans of beef broth ( I prefer Swanson).

  • Place the roast in the slow cooker and season with salt & pepper.

  • Pour two cans of beef broth over the roast. Turn your slow cooker on low.

  • Wash about 6-8 yellow fleshed-potatoes and cut them into cubes.
  • If your mornings are busy, I recommend washing your potatoes the night before to save even more time.

  •  Add the cubed potatoes to your slow cooker and season them with salt & pepper.

  • Add 1 lb of baby carrots to the slow cooker and season with salt and pepper.
  • If the beef broth isn’t covering the top layer of carrots, add water until they are covered.
  • Cover and cook on low heat for 8 hours.

1 lb of baby carrots

5 minutes of prep work, 8 hours of cooking time and dinner is served! I plate it up and garnish with parsley.
